Kizakura has been brewing in Kyoto's Fushimi district, one of Japan's most famous sake regions, since 1925. This is due to the soft spring water of Fushimizu, which gives the region's sake its soft character. This Junmai contains no added brewer's alcohol – only rice, koji, and water. This makes it fuller and more umami-rich than a Honjozo. The carton with 20 bottles of 180 ml is the single portion for restaurants, tastings, and gift boxes. What does Kizakura Junmai taste like?
- Appearance: Clear to light straw-colored, without cloudiness.
- Aroma: Restrained and grainy, with notes of steamed rice, melon, and a hint of nut.
- Taste: Full and rice-typical. Junmai means pure rice – without added brewer's alcohol, the sake appears rounder and more umami-rich, with a noticeable body and a dry finish.

What does Junmai mean?
Junmai literally means pure rice. No brewer's alcohol is added to this sake; it consists only of rice, rice koji, and water. The result is fuller, rounder, and more umami-rich than a Honjozo.
How is Junmai sake best drunk?
Lightly chilled at 5 to 10 °C or on ice. Unlike Honjozo, Junmai is best enjoyed cold because the rice aromas remain clearer.
What does Junmai sake pair with?
With heartier dishes: grilled fish, yakitori, tempura, aged cheese. For sashimi and very light dishes, a Honjozo is often the finer choice.
How long does an opened bottle last?
Sake is not wine – after opening, it belongs in the refrigerator and should be drunk within a few days. With 180 ml, this usually takes care of itself.
